Preheat your oven to 400°F (200°C). Carefully slice the large head of cauliflower into four 1-inch thick 'steaks' by cutting through the core. If smaller florets break off, set them aside to roast with the steaks.
In a small bowl, combine 2 tablespoons of olive oil, curry powder, cumin, turmeric, smoked paprika, cayenne pepper, salt, and black pepper. Mix well to form a thick, aromatic paste.
Brush both sides of each cauliflower steak generously with the curry rub, ensuring an even coating on all surfaces.
Heat a large, oven-safe skillet (cast iron works excellently) over medium-high heat with a splash of olive oil. Sear the cauliflower steaks for 3-4 minutes per side until they develop a deep golden color and slight char.
Transfer the skillet with the seared cauliflower steaks to the preheated oven. Roast for 15-20 minutes, or until the cauliflower is tender when pierced with a fork but still maintains its shape.
While the cauliflower roasts, prepare the mango salsa: combine the finely diced mango, red onion, minced jalapeño, chopped cilantro, and lime juice in a medium bowl. Add a pinch of sugar if the mango is not very sweet, then stir gently. Season with salt and pepper to taste.
Carefully remove the cooked cauliflower steaks from the oven. Plate each steak, top generously with the fresh mango salsa, and garnish with the chopped roasted cashews and fresh mint leaves. Serve immediately for best flavor.
