1Preheat oven to 200°C (400°F). In a large bowl, toss cauliflower florets with 1 tablespoon olive oil, harissa paste, 1/4 teaspoon salt, and 1/8 teaspoon black pepper until evenly coated. Spread in a single layer on a baking sheet.
2Roast cauliflower for 25-30 minutes, flipping halfway, until tender and lightly charred. While cauliflower roasts, heat the remaining 1 tablespoon olive oil in a medium skillet over medium heat.
3Add drained chickpeas, cumin, smoked paprika, garlic powder, remaining 1/4 teaspoon salt, and 1/8 teaspoon black pepper to the skillet. Sauté for 5-7 minutes, stirring occasionally, until chickpeas are lightly crisped and fragrant.
4Prepare the mint-lime crema: In a small bowl, whisk together Greek yogurt, lime juice, lime zest, and chopped mint. Season with a pinch of salt and pepper. Set aside.
5Warm tortillas according to package instructions (microwave, dry skillet, or oven). Arrange shredded red cabbage and sliced red onion for serving.
6To assemble, fill each warm tortilla with roasted harissa cauliflower, spiced chickpeas, a drizzle of mint-lime crema, shredded cabbage, sliced red onion, and a sprinkle of fresh cilantro.
