3Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, place the chicken thighs skin-side down in the skillet and sear for 5-7 minutes until the skin is deeply golden and crisp.
4Flip the chicken thighs and transfer the skillet to the preheated oven. Roast for 20-25 minutes, or until the chicken reaches an internal temperature of 74°C (165°F) and the glaze is caramelized.
5While the chicken roasts, bring the chicken broth to a boil in a medium saucepan. Add the orzo, reduce heat to a simmer, and cook according to package directions, about 8-10 minutes, until al dente.
6Drain any excess liquid from the orzo. Stir in the lemon zest, lemon juice, and chopped fresh mint. Season with salt and pepper to taste.
7Remove chicken from the oven and let rest in the skillet for 5 minutes before serving. Plate the harissa honey chicken thighs alongside the lemon-mint orzo, garnishing with crumbled feta and red pepper flakes if desired.
