1If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
2In a blender or food processor, combine the diced mango, lime juice, honey, minced jalapeño, smoked paprika, garlic powder, olive oil, salt, and pepper. Blend until smooth. Reserve 2 tablespoons of the sauce for serving.
3Add the shrimp to a bowl with the remaining mango marinade. Toss to coat evenly. Cover and refrigerate for 15-20 minutes (do not marinate for too long, as lime juice can cook the shrimp).
4Preheat a grill or grill pan to medium-high heat. Thread the marinated shrimp onto the soaked skewers.
5Grill the shrimp skewers for 2-3 minutes per side, or until the shrimp are pink and opaque, with nice grill marks.
6Remove from the grill and sprinkle generously with fresh chopped cilantro. Serve immediately with the reserved mango sauce for dipping.
