Spicy Mango Shrimp Skewers

Method


  • 1If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.


  • 2In a blender or food processor, combine the diced mango, lime juice, honey, minced jalapeño, smoked paprika, garlic powder, olive oil, salt, and pepper. Blend until smooth. Reserve 2 tablespoons of the sauce for serving.


  • 3Add the shrimp to a bowl with the remaining mango marinade. Toss to coat evenly. Cover and refrigerate for 15-20 minutes (do not marinate for too long, as lime juice can cook the shrimp).


  • 4Preheat a grill or grill pan to medium-high heat. Thread the marinated shrimp onto the soaked skewers.


  • 5Grill the shrimp skewers for 2-3 minutes per side, or until the shrimp are pink and opaque, with nice grill marks.


  • 6Remove from the grill and sprinkle generously with fresh chopped cilantro. Serve immediately with the reserved mango sauce for dipping.

Notes


  • For a milder version, omit the jalapeño seeds or use less.

  • Shrimp cook very quickly; be careful not to overcook them, or they will become rubbery.

  • These skewers are excellent served with coconut rice or a simple green salad.
