In a large pot or Dutch oven, heat coconut oil or ghee over medium heat. Add diced red onion and sauté until softened, about 5-7 minutes.
Add minced garlic and grated ginger, cooking for another minute until fragrant. Stir in ground turmeric, cumin, coriander powder, and red chili flakes, toasting for 30 seconds.
Add the rinsed red lentils, vegetable broth, and full-fat coconut milk to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until lentils are tender, stirring occasionally to prevent sticking.
Once lentils are cooked, stir in the fresh spinach until it wilts, which takes about 2-3 minutes. Remove from heat.
Stir in the lime juice and chopped fresh cilantro. Season generously with salt and black pepper to taste.
Ladle the Golden Coconut Lentils into individual serving bowls. Garnish each bowl with crispy fried shallots before serving hot.
