Method


  • 1Combine diced mango, lime juice, olive oil, sriracha, honey, minced garlic, grated ginger, cumin, smoked paprika, salt, and pepper in a blender. Blend until smooth to create the marinade.


  • 2Place shrimp in a bowl and pour half of the mango marinade over them, ensuring all shrimp are coated. Reserve the remaining marinade for basting. Cover and refrigerate for at least 20 minutes.


  • 3Preheat your grill to medium-high heat. If using wooden skewers, ensure they have been soaked to prevent burning.


  • 4Thread the marinated shrimp onto the skewers, typically 3-4 shrimp per skewer, leaving a small space between each.


  • 5Grill the shrimp skewers for 2-3 minutes per side, brushing with the reserved marinade during the last minute of cooking, until the shrimp are pink and opaque.


  • 6Remove skewers from the grill and let them rest for a minute. Garnish with fresh chopped cilantro and serve immediately.

Notes


  • For extra heat, add an extra dash of sriracha to the marinade.

  • Serve with coconut rice or a crisp green salad for a complete meal.

  • If fresh mango is not available, canned unsweetened mango puree can be used.
