2Place shrimp in a bowl and pour half of the mango marinade over them, ensuring all shrimp are coated. Reserve the remaining marinade for basting. Cover and refrigerate for at least 20 minutes.
3Preheat your grill to medium-high heat. If using wooden skewers, ensure they have been soaked to prevent burning.
4Thread the marinated shrimp onto the skewers, typically 3-4 shrimp per skewer, leaving a small space between each.
5Grill the shrimp skewers for 2-3 minutes per side, brushing with the reserved marinade during the last minute of cooking, until the shrimp are pink and opaque.
6Remove skewers from the grill and let them rest for a minute. Garnish with fresh chopped cilantro and serve immediately.
