1Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
2Pat salmon fillets dry. Rub with 1 tbsp olive oil, then generously coat with Za'atar seasoning, salt, and pepper. Place lemon slices over each fillet.
3Bake salmon for 12-15 minutes, or until cooked through and flaky.
4While salmon bakes, prepare the whipped feta. In a food processor or blender, combine crumbled feta, Greek yogurt, minced garlic, 1 tbsp olive oil, and a squeeze of lemon juice. Blend until smooth and creamy. Season with pepper.
5In a medium bowl, combine halved cherry tomatoes, diced cucumber, thinly sliced red onion, and chopped fresh parsley. Dress with a squeeze of lemon juice, a pinch of salt, and pepper. Add red pepper flakes if using.
6Serve the baked Za'atar salmon immediately. Dollop generous amounts of whipped feta onto plates, top with salmon, and spoon the fresh tomato and cucumber salad alongside.
7Drizzle with any remaining lemon juice if desired.
