Za'atar Salmon with Whipped Feta

Method


  • 1Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.


  • 2Pat salmon fillets dry. Rub with 1 tbsp olive oil, then generously coat with Za'atar seasoning, salt, and pepper. Place lemon slices over each fillet.


  • 3Bake salmon for 12-15 minutes, or until cooked through and flaky.


  • 4While salmon bakes, prepare the whipped feta. In a food processor or blender, combine crumbled feta, Greek yogurt, minced garlic, 1 tbsp olive oil, and a squeeze of lemon juice. Blend until smooth and creamy. Season with pepper.


  • 5In a medium bowl, combine halved cherry tomatoes, diced cucumber, thinly sliced red onion, and chopped fresh parsley. Dress with a squeeze of lemon juice, a pinch of salt, and pepper. Add red pepper flakes if using.


  • 6Serve the baked Za'atar salmon immediately. Dollop generous amounts of whipped feta onto plates, top with salmon, and spoon the fresh tomato and cucumber salad alongside.


  • 7Drizzle with any remaining lemon juice if desired.

Notes


  • For a heartier meal, serve over a bed of fluffy couscous or quinoa.

  • Fresh dill can be used in place of or in addition to parsley in the salad.

  • If you don't have a food processor, finely mash feta with a fork, then vigorously whisk with yogurt and other ingredients until creamy.
